Football Cupcakes
With Superbowl Sunday this weekend I’m sharing these football cupcakes I made. They are super cute and fun for game day.
To make start with your favourite cupcake recipe - I use box cake mix but instead of following the instructions on the box I follow recipe from here and use 3 eggs, 1/2 cup melted butter and 1 cup water. Mix until batter is thick. Scoop in muffin tins lined with cupcake liners and bake at 350 for 20 mins. They always turn out yummy - I think it’s the butter.
To make the icing I just made a basic butter cream. I don’t use a recipe but make by taste. I think it’s about 1 cup softened butter to 4 cups sifted icing sugar and a splash of vanilla and a splash of milk. Add the icing sugar a bit at a time and taste as you go to see how much sugar you need. Mix up until nice and creamy. Then separate some of the icing to leave white and dye the rest green. I used one of the star shaped tips to make the grass. Just play around with it to get the look you want to look like grass, I did a bunch of dots pulling up all over. Then with the white icing use a thin round tip to create lines and numbers on the cupcakes.
The footballs are chocolate covered almonds. Just pipe on the football lace pattern on them and there you go. Because I used buttercream icing for this I put it in the fridge to get firm but this made the footballs sweat when I took them out so if you want to make royal icing for this part it would probably be best but I didn’t want to make 2 different kinds of icing so this works too - just not perfect.
